I am wondering as to whether I should send in my two week notice at work. School starts next week on friday and once that happens, I will be getting home anywhere from 8:00 pm to 1:00 am. Should I quit?

I think 1 in the morning on a school night is really pushing it.
I would say 5-8 or 9 a few days a week is enough. If they will not let you do that, then maybe do Friday nights and longer shifts on the weekends.
Your priority right now is school, not work, so they should understand that and work with you on some type of a schedule.
